Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

A cross between a Flanders Red and a British Stock Ale, brewed with a mixture of crystal, amber and rye malts. Primary fermentation was undertaken with one of our favourite brettanomyces blends, in addition to our house culture of yeast and bacteria.
The beer was then blended (70/30) with 2 year old Amber Sour Beer aged Rye Whiskey barrels.
We transferred this blended beer directly onto the lees and spent fruit (200kg redcurrants/blackcurrants) from our previous Flanders Red - Blood Incantation, in addition to another 200 kg of whole victoria plums, harvested at Pittormie Fruit Farm, 7 miles from the brewery.
A portion of these plums were smoked at the brewery, using oak staves from a red wine barrel. The resulting beer is complex and vinous, with a subtle smoke

Cherry BA Flanders Red with Scottish Honeyberries
We picked two standout barrels of our aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing our beloved Unholy Mountain kriek.
We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then refermented this blend on 200g/l of whole Scottish honeyberries for two months. 780 bottles only

Primary fermented with a blend of Brettanomyces strains, and brewed with local Scottish barley, wheat and oats. Honeybucket was blended from two different batches of beer which had an average age of around 4 months, to which we added fresh elderflower blossom foraged from the local vicinity of the brewery.
In this years (2023) version of Honeybucket we conditioned the base beer with raw heather honey harvested from apiaries on the Falkland Estate, located about 27 miles from the brewery. The rich, deep character of the heather honey combines with bright elderflower aromatics and character from the mixed culture

Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.

A cross between a Flanders Red and a British Stock Ale, brewed with a mixture of crystal, amber and rye malts. Primary fermentation was undertaken with one of our favourite brettanomyces blends, in addition to our house culture of yeast and bacteria.
The beer was then blended (70/30) with 2 year old Amber Sour Beer aged Rye Whiskey barrels.
We transferred this blended beer directly onto the lees and spent fruit (200kg redcurrants/blackcurrants) from our previous Flanders Red - Blood Incantation, in addition to another 200 kg of whole victoria plums, harvested at Pittormie Fruit Farm, 7 miles from the brewery.
A portion of these plums were smoked at the brewery, using oak staves from a red wine barrel. The resulting beer is complex and vinous, with a subtle smoke

We matured our Burton IPA with a mixed culture of wild yeast in oak casks outside the brewery, exposing the wood to the elements for over a year in an attempt to simulate the sort of conditions that gave rise to the strong, vinous stock ales produced in a similar way two or three hundred years ago. The maturation has transformed the beer, rounding off the bitterness and producing a much drier finish, albeit with an appreciable amount of residual sweetness. The characteristic honey and apple notes are still prominent but are now part of a more complex picture that includes wine-like acidity, sour cherry, dried fruit, toffee, soft vanilla and of course the characteristic Brettanomyces funk

This is a classic European beer style that’s associated with the daily ‘liquid bread’ ration of the Trappist monks and isn’t often seen outside of their abbeys. Pours a pale yellow straw colour with lively carbonation and a dense white foam. There’s no shortage of the characteristic bubblegum aroma to compliment the bready malt but the esters don’t overwhelm and it’s a well rounded, refined affair. Crisp, light and easy drinking, moderately bitter with a dry finish

Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

A cross between a Flanders Red and a British Stock Ale, brewed with a mixture of crystal, amber and rye malts. Primary fermentation was undertaken with one of our favourite brettanomyces blends, in addition to our house culture of yeast and bacteria.
The beer was then blended (70/30) with 2 year old Amber Sour Beer aged Rye Whiskey barrels.
We transferred this blended beer directly onto the lees and spent fruit (200kg redcurrants/blackcurrants) from our previous Flanders Red - Blood Incantation, in addition to another 200 kg of whole victoria plums, harvested at Pittormie Fruit Farm, 7 miles from the brewery.
A portion of these plums were smoked at the brewery, using oak staves from a red wine barrel. The resulting beer is complex and vinous, with a subtle smoke

Cherry BA Flanders Red with Scottish Honeyberries
We picked two standout barrels of our aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing our beloved Unholy Mountain kriek.
We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then refermented this blend on 200g/l of whole Scottish honeyberries for two months. 780 bottles only

Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

This Oude Kriek was macerated with sour cherries for almost eleven months. The lambikken used while macerating were both one- and two-year old. By doing so, the weighted average age of this Kriek is a tad less than two-and-a-half years upon release

This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze.
Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release

This is a classic European beer style that’s associated with the daily ‘liquid bread’ ration of the Trappist monks and isn’t often seen outside of their abbeys. A cross between a Flanders Red and a British Stock Ale, brewed with a mixture of crystal, amber and rye malts. Primary fermentation was undertaken with one of our favourite brettanomyces blends, in addition to our house culture of yeast and bacteria.
The beer was then blended (70/30) with 2 year old Amber Sour Beer aged Rye Whiskey barrels.
We transferred this blended beer directly onto the lees and spent fruit (200kg redcurrants/blackcurrants) from our previous Flanders Red - Blood Incantation, in addition to another 200 kg of whole victoria plums, harvested at Pittormie Fruit Farm, 7 miles from the brewery.
A portion of these plums were smoked at the brewery, using oak staves from a red wine barrel. The resulting beer is complex and vinous, with a subtle smoke

Cherry BA Flanders Red with Scottish Honeyberries
We picked two standout barrels of our aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing our beloved Unholy Mountain kriek.
We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then refermented this blend on 200g/l of whole Scottish honeyberries for two months. 780 bottles only

Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

We matured our Burton IPA with a mixed culture of wild yeast in oak casks outside the brewery, exposing the wood to the elements for over a year in an attempt to simulate the sort of conditions that gave rise to the strong, vinous stock ales produced in a similar way two or three hundred years ago. The maturation has transformed the beer, rounding off the bitterness and producing a much drier finish, albeit with an appreciable amount of residual sweetness. The characteristic honey and apple notes are still prominent but are now part of a more complex picture that includes wine-like acidity, sour cherry, dried fruit, toffee, soft vanilla and of course the characteristic Brettanomyces funk

Blended Golden Sour with Apricots
Sunsmasher is a golden sour beer fermented with Brettanomyces and aged on 250g/l Apricots. Blended from three different batches of base beer, all of which were brewed with local barley, wheat and oats. Of the three batches, two were completely unhopped providing deep citrus/peach acidity and subtle funk, whilst the third batch was lightly hopped, producing more intense tropical funk with a restrained acidity. The resulting blend holds a good balance of these characteristics producing juicy tropical, stone fruit and citrus characters which complements the hefty addition of apricot

BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.

Our new beer release this week is an absolute passion project from our head brewer Mat and a beer he's wanted to make for a very long time.
Wah Donka is a wheat wine, taking its name from the Sherpa term for a red panda (hence the wonderful artwork provided by our designer Tina) and in tribute to the beautiful deep red colour of the beer.
The nose opens up with dark fruits and plums followed by the classic banana notes from the Hefeweizen yeast. The taste brings out further quintessential wheat characteristics of Banana and light spices all wrapped around the beautifully boozy, yet light backbone
