The Kernel Brewery // Export Stout: London 1890 // 7.4% // 330ml
The Kernel Brewery // Export Stout: London 1890 // 7.4% // 330ml
This is based on a 19th century recipe from the Truman Brewery in Brick Lane, which we’ve adapted and modified. The black malt brings lots of burnt toast, overly roasted coffee flavours, and an assertive acidity. We have started using a little chocolate malt to try and reduce those acrid, burnt flavours, and some crystal malt to bring sweetness to balance the acidity. We made these changes because, although we enjoyed the beer reproduced from the original recipe, we enjoy our current interpretation more

The Kernel Brewery // Export India Porter // 5.3% // 550ml
The Kernel Brewery // Export India Porter // 5.3% // 550ml
We based our recipe on some of the old porters from Barclay Perkins (1855) and Whitbread (1856) that were sent out to British servicemen in India, and inspired by the Durden Park Beer Circle pamphlet ‘Old British Beers and How To Make Them’. The ingredients and equipment they used then have of course changed, as have our tastes, and so we have made some modifications. We’ve tempered the roast character of the original with chocolate and crystal malts in place of some of the black: too much black malt can produce overly acrid, burnt and astringent flavours. Crystal malts bring a sweetness and fullness to the beer, and a bigger texture/mouthfeel. The main difference though is that our EIP is hopped in the way we would hop our pale ales and IPAs:  lots of late addition hops for flavour, and we then dry hop when the beer is in tank. We mostly use American hops for their intensity and fruity characteristics, but we like to experiment with the different flavours that arise when they’re combined with darker malts. Bramling Cross is our favourite for a more traditional British character, whereas Columbus works very well for a brasher, new world flavour. The result is a dark brown beer that promises coffee and cocoa, but then the hops bring lightness, brightness and fruit, and the relatively high carbonation - unusual for a porter - make it surprisingly refreshing. Malt: Maris Otter, brown, black, chocolate, crystal Hops: varies batch to batch Yeast: American ale yeast.

The Kernel Brewery // East India Pale Ale: London 1897 // 6.0% // 500ml
The Kernel Brewery // East India Pale Ale: London 1897 // 6.0% // 500ml
Based on a Fuller’s recipe from 1897. While London was the point of origin of the East India Pale Ale, by this time it was no longer the centre of the production of pale beers bound for India (this had moved to Burton). We chose a London recipe, as that is who we are, and it appeals to us to try to connect once again with London’s brewing history, this time to situate IPAs once again within the cities brewing lineage. This year we’ve brewed the beer with Ernest hops, a modern English variety with a distinctly British character — hedgerow fruit, soft citrus and a little spice

The Kernel Brewery // Table Beer // 3.0% // 500ml
The Kernel Brewery // Table Beer // 3.0% // 500ml
A light pale ale (around 3% abv.) made with malted barley and rolled oats. Our first batch was brewed in 2012 as an attempt to create a low-alcohol beer that did not suffer from being thin-bodied or lacking in character, and was inspired by the cask tradition rather than that of American pales. The full body is achieved using an elevated mash temperature and oats in the grist, alongside a slightly lower carbonation. Like our pale ales, hop aromas are the focus, with bitterness in balance. We aim for a pale golden colour, real body, sweet malt flavours, a fresh hop character and a clean, refreshing bitterness alongside an intense flavour that belies its low abv. Malt: Maris Otter, oats Hops: vary from batch to batch Yeast: American ale yeast.

Simple Things Fermentations // Session Stout // 4.0% // 440ml
A much deeper and more complex stout than the ABV would suggest arrives with waves of coffee and dark chocolate. Pouring a very dark brown with a crema-coloured foam lacing the sides of the glass there’s a gentle hoppy freshness in the aroma from a dose of Summit hops late in the boil, and this is picked up on the palate too, adding a refreshing modern touch to the classic roasty profile from the blend of malted grains. A helping of oats and a high finishing gravity provide a smooth mouthfeel and satisfying body.

Simple Things Fermentations // Scottish Export // 5.5% // 440ml
Rich, glowing mahogany in colour with a thick, creamy head, this contemporary take on the classic Scottish 80 Shilling style is fermented low and slow to let the grains do the talking. Maris Otter, wheat, and rye malts offer a luscious combination of toffee apple and dried fruit with sherry; there’s a subtle treacle note, a shot of pine citrus and a distinct woody character. Robust and complex with a good balance of sweet, sharp and bitter, an inviting silky mouthfeel encourages a generous first sip

Polly's Brew Co // Hybrid Minds // 5.8% // 440ml
Polly's Brew Co // Hybrid Minds // 5.8% // 440ml
Hybrid Minds is a straight up two-hop showcase of a pale ale - Idaho 7 bringing zesty marmalade with underlying earthy black tea notes, and Nelson Sauvin showing why it's one of the most sought-after varietals on the planet with its characteristic white wine grape and gooseberry medley. The real magic in this beer though is through our use of Cryo Idaho 7 in the whirlpool; creating, in our opinion anyway, a much cleaner bitterness throughout the drinking experience. Bridging that gap between pale ale and IPA strength at 5.8% and wrapped up in our bespoke LA3 strain for maximum fluffiness, this beer is an expression of our love of experimentation

Barrel Aged Golden Sour with Blackberries, Red Gooseberries & Rhubarb A collaboration with our friends at Balance Brewing & Blending, this golden base beer was fermented in a white wine barrel previously inoculated with a mixed culture from Balance and Holy Goat. Given the uniqueness of this barrel in our cellar, we chose to fruit it as a follow-up to our original collaboration, Scylla. After 20 months of oak ageing with the addition of 40L of rhubarb juice, the beer was refermented for a further two months on 220g/L of locally grown Scottish blackberries and red gooseberries before bottle conditioning. The result is bright, vinous and juicy, with notes of red fruit pastilles, currant compote and a gentle oak. Limited to 468 bottles.

First brewed in 2021 from our old brewery in Portobello, this is the evolution of a sour IPA we’ve revisited countless times since the early days of Vault City. This time, we’ve taken a fan favourite and turned it up a notch, brewing a DIPA combining our mixed fermentation base beer with fresh lemon juice, zest and a triple dry-hop of New Zealand varieties amplifying notes of citrus, white grape and gooseberry

The third beer of our birthday celebration rewinds the clock back to 2020, with a tropical sour recipe from the depths of lockdown. This was one of the final beers we made when cuckoo brewing in Dundee, shortly before returning to our Edinburgh roots at our first ever dedicated brewery site. A vibrant blend of mandarin, mango and passionfruit pairs perfectly with our house mixed culture creating something unbelievably juicy and refreshing to the very last sip

Named after the hill that overlooks Perth and the River Tay, this is our take on a traditional Scottish red ale albeit with the complexity of using 6 types of malt and 3 types of hop. The debate over the past few days is whether this is a Flemish Red, a Flemish Bruin, an Oud Bruin, or Old Brown. We can't say it's Flemish, because we're in London, and Old Brown is a rubbish name for anything but a retired pit pony, so we went with Oud Bruin. We toyed with the idea of calling it Duchess De Bermondsey which we will continue to do but have been explicitly told this can not be on a label. Please do not call this beer Duchess De Bermondsey on your blackboards, your social media feeds, your rotational table menu's or your Tinder accounts

Biere de Saison: Sour Cherry 2024 Montmorency // 5.5% // 330ml
Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder.

Brewed with golden promise pale malt, wheat and locally grown flaked oats. Primary fermented with a mixed culture which includes a blend of Brettanomyces strains. We refermented this beer with 250g/l of the first of the 2026 harvest of Scottish strawberries, grown approximately 24 miles from the brewery. These strawberries were added to the beer within one week of harvest to provide the freshest most intense fruit character possible. Brewed in collaboration with Black Kite brewery in Hong Kong, we decided to add a cold infusion of Nanling Mountain Milk Oolong tea. This is a AAA grade of the Iron Goddess Oolong tea, grown in Fujian province China, and presents a unique creamy milk taste along with notes of orchid.

Brewed in collaboration with our pals at Radical Way Brewing (Cyprus), this Flanders Red inspired sour beer is a blend of 70% provision strength ‘young’ stock beer brewed aged in a stainless steel for six months. A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month. The resulting beer has a complex vinous character, along with notes of stewed plums, dates, fig and balsamic vinegar

After 20 months of oak ageing with the addition of 40L of rhubarb juice, the beer was refermented for a further two months on 220g/L of locally grown Scottish blackberries and red gooseberries before bottle conditioning. Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Hail the Goat!

Petrus Flanders is a smooth, velvety Flanders Red Ale aged in oak barrels for 2 years. A blend with a fresh, young brown ale keeps this beer balanced, giving it a soft roasted and caramel touch. Its name refers to the barrels used in the ageing process and the ruby red colour that reflects its warm and smooth finish. Do not be mistaken; thanks to the addition of a young brown ale to the barrel aged beer, it is extremely drinkable at only 5.5 ABV

Framboise style sour with Scottish Tayberries Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month.

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

Tastes like a smokey Stout, looks like a Pale and drinks like an IPA. Mashing it right up! Brewed with green Arabica beans and cacao husks, imparting the cornerstones of Stout character into a smooth pale beer that incorporates both beech and oak smoked grains. Sweet and smokey aromatics with big, fruity coffee notes broaden into a full spectrum that runs from the signature robust, burnt grain of roasted barley into velvety orange-citrus dark chocolate. Soft and smooth on the palate with a rich, creamy texture, moderate bitterness and subtle vanilla sweetness. There’s plenty going on, but with everything in its right place it drinks deliciously easily. Our Smoked White Stout is a carefully crafted melange of flavour that’s both familiar and unique
