Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder.

Brewed with golden promise pale malt, wheat and locally grown flaked oats. Primary fermented with a mixed culture which includes a blend of Brettanomyces strains. We refermented this beer with 250g/l of the first of the 2026 harvest of Scottish strawberries, grown approximately 24 miles from the brewery. These strawberries were added to the beer within one week of harvest to provide the freshest most intense fruit character possible. Brewed in collaboration with Black Kite brewery in Hong Kong, we decided to add a cold infusion of Nanling Mountain Milk Oolong tea. This is a AAA grade of the Iron Goddess Oolong tea, grown in Fujian province China, and presents a unique creamy milk taste along with notes of orchid.

Brewed in collaboration with our pals at Radical Way Brewing (Cyprus), this Flanders Red inspired sour beer is a blend of 70% provision strength ‘young’ stock beer brewed aged in a stainless steel for six months. A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month. The resulting beer has a complex vinous character, along with notes of stewed plums, dates, fig and balsamic vinegar

A Belgian-style Pale Ale brewed with whole cone Ernest hops and fermented with an expressive Belgian yeast strain, giving rise to a deliciously fruity character with big citrus and stone fruit notes alongside clove and black pepper spice. This is a classic European beer style that’s associated with the daily ‘liquid bread’ ration of the Trappist monks and isn’t often seen outside of their abbeys. Pours a pale yellow straw colour with soft, buzzy carbonation and thick white foam. Brewed in collaboration with our pals at Radical Way Brewing (Cyprus), this Flanders Red inspired sour beer is a blend of 70% provision strength ‘young’ stock beer brewed aged in a stainless steel for six months. A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month. The resulting beer has a complex vinous character, along with notes of stewed plums, dates, fig and balsamic vinegar

Brewed with golden promise pale malt, wheat and locally grown flaked oats. Primary fermented with a mixed culture which includes a blend of Brettanomyces strains. We refermented this beer with 250g/l of the first of the 2026 harvest of Scottish strawberries, grown approximately 24 miles from the brewery. These strawberries were added to the beer within one week of harvest to provide the freshest most intense fruit character possible. Brewed in collaboration with Black Kite brewery in Hong Kong, we decided to add a cold infusion of Nanling Mountain Milk Oolong tea. This is a AAA grade of the Iron Goddess Oolong tea, grown in Fujian province China, and presents a unique creamy milk taste along with notes of orchid.

Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder. The beer can be dry-hopped or re-fermented with whole fruit, such as damsons, quince or apricots

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months

Blended from two batches of golden sour beer aged on 400 kg of local Scottish blueberries, in addition to 10 kg of Nigerian hibiscus and 4 kg of Tanzanian vanilla. For this latest edition of Sunsmasher, our golden sour base beer was fermented with a Brettanomyces blend and aged for just over four months in tank before being conditioned on 220 g/L of whole British apricots, which were pulverised by hand (using a mallet). Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Limonata sour with Spanish Lemons Brewed in collaboration with our pals at Newbarns Brewery, we took inspiration from Limonata soft drinks to produce our own mixed fermentation version. We refermented this base beer with over 100kg of lemons, with a mixture of 60kg comminute and 40kg organically grown whole lemons from Comares, Spain. The whole lemons were zested and juiced by hand. Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. We call it a London Porter to differentiate it from its sibling, the racier Export India Porter, where export levels of hops give a fruitier, more flighty beer. In a London Porter things are warm and dark and rich. The feel and texture are nourishing. Dried fruit - raisins, prunes and dates - and chocolate. Then a balanced espresso finish. Hints of leather, tar, tobacco. Lots of coffee and cocoa. The recipe itself is typical of London, in its use of a large proportion of brown malt, which gives the beer a hint of spice along with some smoke, leather and tar in the flavour, and a dry finish. Also a portion of black malt was added to the boil, which apparently was something only done in London, which increased the roast/coffee character. East Kent Goldings were the hops of choice for the best beers at that time

We based our recipe on some of the old porters from Barclay Perkins (1855) and Whitbread (1856) that were sent out to British servicemen in India, and inspired by the Durden Park Beer Circle pamphlet ‘Old British Beers and How To Make Them’. The ingredients and equipment they used then have of course changed, as have our tastes, and so we have made some modifications. We’ve tempered the roast character of the original with chocolate and crystal malts in place of some of the black: too much black malt can produce overly acrid, burnt and astringent flavours. Crystal malts bring a sweetness and fullness to the beer, and a bigger texture/mouthfeel. The main difference though is that our EIP is hopped in the way we would hop our pale ales and IPAs: lots of late addition hops for flavour, and we then dry hop when the beer is in tank. We mostly use American hops for their intensity and fruity characteristics, but we like to experiment with the different flavours that arise when they’re combined with darker malts. Bramling Cross is our favourite for a more traditional British character, whereas Columbus works very well for a brasher, new world flavour. The result is a dark brown beer that promises coffee and cocoa, but then the hops bring lightness, brightness and fruit, and the relatively high carbonation - unusual for a porter - make it surprisingly refreshing

Brewed in collaboration with The Gyphon, the finest Bristolian heavy metal pub/live music venue and longtime pals. We came together to produce an infernal imperial stout utilising a complex blend of nine different malts, demerara sugars and conditioned on whole coffee beans from The Source Coffee Roasters. We chose natural process Caturra beans from the Finca Noruega farm in the Apaneca region of El Salvador. The beer was cold steeped on these beans for five days extracting dark fruits, chocolate and caramel flavours. The result is a powerhouse stout with jammy roasted coffee layered over rich chocolate, caramel, demerara and black treacle.

This is based on a 19th century recipe from the Truman Brewery in Brick Lane, which we’ve adapted and modified. The black malt brings lots of burnt toast, overly roasted coffee flavours, and an assertive acidity. We have started using a little chocolate malt to try and reduce those acrid, burnt flavours, and some crystal malt to bring sweetness to balance the acidity. We made these changes because, although we enjoyed the beer reproduced from the original recipe, we enjoy our current interpretation more.

We refermented this beer with 250g/l of the first of the 2026 harvest of Scottish strawberries, grown approximately 24 miles from the brewery. These strawberries were added to the beer within one week of harvest to provide the freshest most intense fruit character possible. Brewed in collaboration with Black Kite brewery in Hong Kong, we decided to add a cold infusion of Nanling Mountain Milk Oolong tea. This is a AAA grade of the Iron Goddess Oolong tea, grown in Fujian province China, and presents a unique creamy milk taste along with notes of orchid.

Brewed in collaboration with our pals at Radical Way Brewing (Cyprus), this Flanders Red inspired sour beer is a blend of 70% provision strength ‘young’ stock beer brewed aged in a stainless steel for six months. A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder.

Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder.

Brewed in collaboration with our pals at Radical Way Brewing (Cyprus), this Flanders Red inspired sour beer is a blend of 70% provision strength ‘young’ stock beer brewed aged in a stainless steel for six months. A portion of around 30% ‘mature’ stock beer was aged in red wine barrels which had been soaked with Commandaria, a Cypriot dessert wine with history dating back to the Crusades. The resultant blend was fermented and conditioned on dried figs for a further month. The resulting beer has a complex vinous character, along with notes of stewed plums, dates, fig and balsamic vinegar

Brewed with golden promise pale malt, wheat and locally grown flaked oats. Primary fermented with a mixed culture which includes a blend of Brettanomyces strains. We refermented this beer with 250g/l of the first of the 2026 harvest of Scottish strawberries, grown approximately 24 miles from the brewery. These strawberries were added to the beer within one week of harvest to provide the freshest most intense fruit character possible. Brewed in collaboration with Black Kite brewery in Hong Kong, we decided to add a cold infusion of Nanling Mountain Milk Oolong tea. This is a AAA grade of the Iron Goddess Oolong tea, grown in Fujian province China, and presents a unique creamy milk taste along with notes of orchid.

Our emphasis on improving every facet of our brewing experience is at full play on Unlikely Places and it’s all the better for it. We’re already huge fans of Talus here in the brewery, Simcoe and Citra need no introduction whatsoever as cornerstone hops intertwined throughout our brewing history, and we know they combine incredibly well. How do you accelerate that flavour experience though? Lean into our head brewer Joe’s passion for exploration and experimentation with different varieties within varieties is what you do! With a simple and unfussy Citra T90 addition hot side, we’ve gone all out on the cold side, with additions of Citra Lupomax, Simcoe in both its T90 and Cryo form, and Talus again in both its T90 and Cryo form. The end result is an IPA absolutely packed to the nines with stonefruit, mango, zesty pink grapefruit, summer berries and lime.

A Belgian-style Pale Ale brewed with whole cone Ernest hops and fermented with an expressive Belgian yeast strain, giving rise to a deliciously fruity character with big citrus and stone fruit notes alongside clove and black pepper spice. This is a classic European beer style that’s associated with the daily ‘liquid bread’ ration of the Trappist monks and isn’t often seen outside of their abbeys. Pours a pale yellow straw colour with soft, buzzy carbonation and thick white foam. Troy founded the "IPA factory that sometimes makes other beer" with his wife Grace and best friend Mike in 2017, starting off with tiny 1 barrel brews in a calf barn on Grace's family farm before becoming one of Canada's finest breweries. We've digitally collaborated on a double dry hopped DIPA packed with Riwaka, Motueka and Citra Cryo Fresh.

This is based on a 19th century recipe from the Truman Brewery in Brick Lane, which we’ve adapted and modified. The black malt brings lots of burnt toast, overly roasted coffee flavours, and an assertive acidity. We have started using a little chocolate malt to try and reduce those acrid, burnt flavours, and some crystal malt to bring sweetness to balance the acidity. We made these changes because, although we enjoyed the beer reproduced from the original recipe, we enjoy our current interpretation more.

Brewed in collaboration with The Gyphon, the finest Bristolian heavy metal pub/live music venue and longtime pals. We came together to produce an infernal imperial stout utilising a complex blend of nine different malts, demerara sugars and conditioned on whole coffee beans from The Source Coffee Roasters. We chose natural process Caturra beans from the Finca Noruega farm in the Apaneca region of El Salvador. The beer was cold steeped on these beans for five days extracting dark fruits, chocolate and caramel flavours. The result is a powerhouse stout with jammy roasted coffee layered over rich chocolate, caramel, demerara and black treacle.

We wanted this to be a little lighter and fresher than the other porter recipes that we brew, to acknowledge its running nature. We call it a London Porter to differentiate it from its sibling, the racier Export India Porter, where export levels of hops give a fruitier, more flighty beer. In a London Porter things are warm and dark and rich. The feel and texture are nourishing. Dried fruit - raisins, prunes and dates - and chocolate. Then a balanced espresso finish. Hints of leather, tar, tobacco. Lots of coffee and cocoa. The recipe itself is typical of London, in its use of a large proportion of brown malt, which gives the beer a hint of spice along with some smoke, leather and tar in the flavour, and a dry finish. Also a portion of black malt was added to the boil, which apparently was something only done in London, which increased the roast/coffee character. East Kent Goldings were the hops of choice for the best beers at that time

Mixed Fermentation Golden Sour with Scottish Blackberries Blended from two batches of golden sour beer, both primary fermented with different Brettanomyces strains and brewed with locally grown malted barley, wheat and oats. This blend has an average age of four months and provides berry forward, stone fruit and forest fruit aromatics. We conditioned this blended beer on 220g/l of locally grown Scottish blackberries (aka brambles). The resulting beer has an intense red/purple hue, and aromas of a forest fruit medley. We get sweet/sour tangy, hedgerow berries, guava, jammy raspberries and some light tannin from the berry skins

We based our recipe on some of the old porters from Barclay Perkins (1855) and Whitbread (1856) that were sent out to British servicemen in India, and inspired by the Durden Park Beer Circle pamphlet ‘Old British Beers and How To Make Them’. The ingredients and equipment they used then have of course changed, as have our tastes, and so we have made some modifications. We’ve tempered the roast character of the original with chocolate and crystal malts in place of some of the black: too much black malt can produce overly acrid, burnt and astringent flavours. Crystal malts bring a sweetness and fullness to the beer, and a bigger texture/mouthfeel. The main difference though is that our EIP is hopped in the way we would hop our pale ales and IPAs: lots of late addition hops for flavour, and we then dry hop when the beer is in tank. We mostly use American hops for their intensity and fruity characteristics, but we like to experiment with the different flavours that arise when they’re combined with darker malts. Bramling Cross is our favourite for a more traditional British character, whereas Columbus works very well for a brasher, new world flavour. The result is a dark brown beer that promises coffee and cocoa, but then the hops bring lightness, brightness and fruit, and the relatively high carbonation - unusual for a porter - make it surprisingly refreshing

For this latest edition of Sunsmasher, our golden sour base beer was fermented with a Brettanomyces blend and aged for just over four months in tank before being conditioned on 220 g/L of whole British apricots, which were pulverised by hand (using a mallet). Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Hail the Goat!

Limonata sour with Spanish Lemons Brewed in collaboration with our pals at Newbarns Brewery, we took inspiration from Limonata soft drinks to produce our own mixed fermentation version. We refermented this base beer with over 100kg of lemons, with a mixture of 60kg comminute and 40kg organically grown whole lemons from Comares, Spain. The whole lemons were zested and juiced by hand. Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Working our recipe around the fika breaks we have at Polly’s every working day, we loved the idea of creating the flavour profile of a danish pastry in this beer - utilising the fresh vanilla we’ve applied to our Oat Cream beers, alongside raisin for a subtle fruit sweetness, and a final flourish of cinnamon to balance everything out. Featuring artwork produced by the wonderful local artist and good friend of the brewery Jake Cross, this beer took up a grand total of five separate brew slots in our brewing week, with a ridiculous twenty-four hour slow rolling boil to concentrate all those sugars. the result is a slick, oily and decadent imperial stout - rich in flavour but not cloying
