Mixed Fermentation Gose with Red Gooseberries. We teamed up with our friends at Futtle (based in East Neuk, Fife) and Scratch Brewing (based in Illinois, US) for this foraged gose. We blended a golden sour base beer from our blending stock and aged this on whole locally grown red gooseberries (goosegogs). We used a carbonic maceration process to help break down the fruit and gain additional complexity from these berries. To this blend we added foraged seaweed from the shores of East Neuk and spicebush berries from the woods around Scratch brewing. The resultant beer is sweet, salty, with heaps of gooseberry, spice and a whiff of sea-breeze

Simple Things Fermentations // Foreign Extra Stout // 7.0% // 440ml
Like a rugged off-road version of its smooth, dry Irish cousin, the Foreign Extra Stout is gnarly and coat-your-mouth chewy as opposed to clean and crisp. We’ve gone big on the roast malts here, with both roast barley and black malt in the kettle, and doubled down on the darkness with a substantial addition of molasses. The original Foreign Extra Stouts were fortified with increased hopping rates to aid preservation, and that extra bitterness balances the higher ABV as well as the treacle-sweetness. Rich, lightly burned dark chocolate aromas; roast-driven and treacly with a substantial full-bodied mouthfeel. A long, bitter finish that makes for a somewhat unexpectedly moreish experience. Naturally carbonated, vegan friendly

BA Flanders Red with Strawberries Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Raspberries harvested with 20 miles of the brewery. Our goal with this vintage was to get beer onto the fruit as soon as possible after harvesting to best showcase their intense fruit character, vibrant pinkish red hue and huge aroma. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. The resulting beer has a sour raspberry jam, hedgerow berries, pink fruit jelly and a touch of funkiness

Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Framboise style sour beer with Scottish Tayberries. Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

With a soft tan head and deep ruby hue, our take on a traditional Barleywine features a rich blend of British and German malts with a late addition of English and New Zealand hops. A complex grain bill of Pale, Munich, Crystal, Amber, Carafa and Melanoidin malts creates a full-bodied biscuity foundation with nutty undertones. East Kent Goldings and Taiheke hops added towards the end of the boil infuse a subtle hop character that perfectly complements the malt base. Each sip delivers notes of dark fruit with plum, raisin, and fig at the forefront, rounding out this exquisitely layered Barleywine

Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age

Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha. The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label

Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. The resulting beer has a sour raspberry jam, hedgerow berries, pink fruit jelly and a touch of funkiness

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

Limited to 336 bottles

King Void uses a heavyweight dose of roasted and black malts (~15%) along with a host of other dark and crystal malts to create the blackest beer possible. We cold steeped this beer over a four day period, on natural process Rwandan coffee beans, in addition to ethically farmed Colombian cacao nibs and Indonesian vanilla beans

Another exciting brewery debut for Mash '24 is the mighty Mortalis. These guys don't do things by halves so when we starting chatting about a collab we knew we had to go mad. This is the most heavily fruited sour beer that we have ever brewed and it's a tropical fruit blast. Pineapple, passion fruit and mango by the trailer load and conditioned on organic vanilla from Madagascar and a touch of salt. This is a luxurious slice of summer that really feels like a sweet tropical fruit smoothy with a roundness from the vanilla and a refreshing salty kick

The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was refermented and conditioned on 100kg of date syrup

East Kent Goldings and Taiheke hops added towards the end of the boil infuse a subtle hop character that perfectly complements the malt base. A hybrid of bitter orange and lemon, this citrus fruit is prized for its intensely fragrant aroma, and most widely known for its use in Earl Grey tea
