Holy Goat Brewing // Honeybucket // 7.2% // 375ml
This blended golden sour was brewed with locally harvested malts and fermented with a Brettanomyces-led mixed culture of yeast and bacteria. Honeybucket was made from a single batch of wort which was split between two fermenters, one fermented open, the other closed, producing two beers with subtly different characteristics. These were blended back together and refermented with raw blossom honey from an apiary on the Falkland Estate in Fife. The bees collect pollen from wildflowers, clover, balsam, apple and lime on this organic land, producing a rich, fragrant and complex honey. To this we also added fresh elderflower blossom foraged close by the brewery.

BA Blended Flanders Red with Scottish Tayberries. Inspired by Flanders Reds of old, Goat Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in ex-Heaven Hill bourbon oak barrels. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto 220g/l of 2022 harvest of Scottish Tayberries, sourced from farms located within 40 miles of the brewery. Tayberries are a cross between raspberries and blackberries. Expect complex raspberry aroma to dominate, with blackberry-forward characteristics on the palate

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. Scottish Heather Ales have evidence dating back to the Neolithic in Scotland, and were later romanticised by the 19th century poet Robert Louis Stevenson. Our rendition was brewed in collaboration with our friends at Cult of Oak. Taking additional inspiration from Scandinavian farmhouse brewing practices, we harvested heather branches from the Sidlaw Hills and added these into the mash. Locally grown, aged First Gold hops were added during a hot steep in the kettle, though the wort was never boiled and so this is technically a raw ale. The beer was aged and matured in tank for 8 months with a diverse mixed culture, before bottle conditioning with local heather honey

Golden sour with Sicilian oranges and lemons. Primary fermented with our ‘Goat Wizard’ Brettanomyces blend, and brewed with local Scottish barley, wheat and oats. We aged Summer Crusher for 3 months in stainless steel before adding over 80kg of oranges and lemons (70/30) which were zested, pulped and juiced by hand. We sourced the highest quality citrus fruits, directly from the growers Bio Agrumi Monasteri, who specialise in organic and sustainable cultivation practices. We macerated the beer on the citrus fruit for an additional month during the beers extended conditioning time

We've based this on one of our recent WCIPA's, Plasticity, but have replaced the Cascade portion of the dry hop with Amarillo to push the orangey citrus character further. Combined with Citra, Simcoe and Columbus the aroma immediately presents plenty of dank pine resin, marijuana, orange and grapefruit zest and some slight peachiness. The initial taste follows with more citrus and a little kiss of sweetness before finishing with a dry and firm bitterness that does't overstep the mark. The body is on the leaner, drier side yet with the little addition of a very light caramel malt, a slight sweet touch blends with the bitter finish to give some of that sticky, oily, resinous character that we love in West Coast IPA. Inspired by Flanders Reds of old, Goat Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in ex-Heaven Hill bourbon oak barrels. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto 220g/l of 2022 harvest of Scottish Tayberries, sourced from farms located within 40 miles of the brewery. Tayberries are a cross between raspberries and blackberries. Expect complex raspberry aroma to dominate, with blackberry-forward characteristics on the palate

This blended golden sour was brewed with locally harvested malts and fermented with a Brettanomyces-led mixed culture of yeast and bacteria. Honeybucket was made from a single batch of wort which was split between two fermenters, one fermented open, the other closed, producing two beers with subtly different characteristics. These were blended back together and refermented with raw blossom honey from an apiary on the Falkland Estate in Fife. The bees collect pollen from wildflowers, clover, balsam, apple and lime on this organic land, producing a rich, fragrant and complex honey. To this we also added fresh elderflower blossom foraged close by the brewery.

Scottish Heather Ales have evidence dating back to the Neolithic in Scotland, and were later romanticised by the 19th century poet Robert Louis Stevenson. Our rendition was brewed in collaboration with our friends at Cult of Oak. Taking additional inspiration from Scandinavian farmhouse brewing practices, we harvested heather branches from the Sidlaw Hills and added these into the mash. Locally grown, aged First Gold hops were added during a hot steep in the kettle, though the wort was never boiled and so this is technically a raw ale. The beer was aged and matured in tank for 8 months with a diverse mixed culture, before bottle conditioning with local heather honey

We sourced the highest quality citrus fruits, directly from the growers Bio Agrumi Monasteri, who specialise in organic and sustainable cultivation practices. Scottish Heather Ales have evidence dating back to the Neolithic in Scotland, and were later romanticised by the 19th century poet Robert Louis Stevenson. Our rendition was brewed in collaboration with our friends at Cult of Oak. Taking additional inspiration from Scandinavian farmhouse brewing practices, we harvested heather branches from the Sidlaw Hills and added these into the mash. Locally grown, aged First Gold hops were added during a hot steep in the kettle, though the wort was never boiled and so this is technically a raw ale. The beer was aged and matured in tank for 8 months with a diverse mixed culture, before bottle conditioning with local heather honey

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!

Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months.The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Fermented with a mixed culture and aged for around three months, before being transferred onto 250l of blood orange and clementine juice, with an additional 50kg of whole fruit, which were zested, pulped, and juiced by hand. Our newest West Coast IPA to come off the line is Santako. We've based this on one of our recent WCIPA's, Plasticity, but have replaced the Cascade portion of the dry hop with Amarillo to push the orangey citrus character further. Combined with Citra, Simcoe and Columbus the aroma immediately presents plenty of dank pine resin, marijuana, orange and grapefruit zest and some slight peachiness. The initial taste follows with more citrus and a little kiss of sweetness before finishing with a dry and firm bitterness that does't overstep the mark. The body is on the leaner, drier side yet with the little addition of a very light caramel malt, a slight sweet touch blends with the bitter finish to give some of that sticky, oily, resinous character that we love in West Coast IPA. This is a west coast IPA designed with drinkibility in mind and what's more it's even celiac-friendly
