Abernyte Brewery // Kinnoull Red // 4.7% // 500ml
Named after the hill that overlooks Perth and the River Tay, this is our take on a traditional Scottish red ale albeit with the complexity of using 6 types of malt and 3 types of hop. This ruby tinted ale carries a vanilla-caramel sweetness which is very quickly balanced by the earthiness of Goldings and Cascade Hops
£4.60
Abernyte Brewery // Fullbore // 5.6% // 500ml

Sinnister Brew // Occasional Irregularity // 10.6% // 440ml
Whisky, Whiskey & Bourbon barrel aged strawberry, coconut, amburana and vanilla cheesecake imperial dessert stout. big old impy from multiple barrels, then re-fermented on a shit load of scottish strawberries, toasted coconut, Amburana wood chips and Tahitian vanilla pods. expect a big impy with tart strawberry (being fermented the strawberry flavour isn't sweet (damn yeast) but this gives it a cheesecake feel) along with your typical toasted coconut blending in with the vanilla and a little cinnamon from the amburana. sinnister doesn't often do "dessert stouts" But you'll have to bear with the "occasional irregularity"

Premium Pilsner malt builds a classic bready-malt foundation onto which we layer light-touch hop additions of Riwaka and Maui Nelson, weaving delicate strands of tropical fruit. Landing somewhere between the straight up Czech-style of Bohemian Pilsner and our beloved lemon-tinged Twisted Pilsner, the NZ version is soft and rounded with restrained bitterness and subtle notes of pineapple and white grape

A touch of spice on the nose is underpinned with honey, toast and biscuit. Super smooth, well balanced with moderate bitterness and a crisp dry finish; this is a tasty, easy drinking, highly sessionable ale.

Thick, hazy, juicy NEIPA packed with heavy-hitting tropical hops; Dolcita, Nectaron and Citra bring a tidal wave of mango, honeydew melon, passionfruit and clementine with subtle hints of creamy coconut. Building on a Maris Otter malt foundation we layer whole cone and pellet hops in the boil then load up on Abstrax hop extract to inject punchy fruit cocktail flavour with intensity dialled up to 11. Pillowy sweet with a soft sherbet tingle, natural carbonation - as ever - keeps everything smooth and rounded. A lingering finish holds a touch of bitterness because after all’s said and done it’s an IPA, and balance is everything

The Kernel Brewery // Pale Ale: Mosaic // 5.4% // 500ml

£4.60
The Kernel Brewery // Biere de Saison: Raspberry // 4.9% // 330ml
The Kernel Brewery // Biere de Saison: Raspberry // 4.9% // 330ml
Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression. The in itial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather. Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder. The beer can be dry-hopped or re-fermented with whole fruit, such as damsons, quince or apricots

The Kernel Brewery // Running Porter // 5.0% // 500ml
The Kernel Brewery // Running Porter // 5.0% // 500ml
We wanted this to be a little lighter and fresher than the other porter recipes that we brew, to acknowledge its running nature. This beer leans into light cocoa, almost cola aromatics, with the herbal fruity hedgerow of Goldings and Bramling Cross. The body is refreshing, a touch of warmth, a touch of roast, a touch of tea-like tannins. It moves through a red-berry phase into a hazelnut / praline roundness, then a clean dry finish
£4.60
The Kernel Brewery // A London Porter // 5.1% // 500ml
The Kernel Brewery // A London Porter // 5.1% // 500ml
We call it a London Porter to differentiate it from its sibling, the racier Export India Porter, where export levels of hops give a fruitier, more flighty beer. In a London Porter things are warm and dark and rich. The feel and texture are nourishing. Dried fruit - raisins, prunes and dates - and chocolate. Then a balanced espresso finish. Hints of leather, tar, tobacco. Lots of coffee and cocoa. The recipe itself is typical of London, in its use of a large proportion of brown malt, which gives the beer a hint of spice along with some smoke, leather and tar in the flavour, and a dry finish. Also a portion of black malt was added to the boil, which apparently was something only done in London, which increased the roast/coffee character. East Kent Goldings were the hops of choice for the best beers at that time

“Schlenkerla Helles” is brewed with fine Bavarian aroma hops from the area around the city of Nürnberg. It's lagered in century old caves underneath the historic Schlenkerla brewery and maltings. Schlenkerla Helles is boiled in the same copper kettles and bottom fermented by the same yeast as the historic Schlenkerla Smokebeer. Its subtle smokiness without using smoke malt makes “Helles Schlenkerla Lager” a unique representative of the classic lager beer style “Bavarian Helles”

Named Cinq Cents, this beer, with its typical golden color, slightly hazy appearance and fine head, is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. It was first brewed by the monks of Chimay at Scourmont Abbey in 1966. Above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma

Mixed Fermentation Golden Sour with Scottish Blackberries Blended from two batches of golden sour beer, both primary fermented with different Brettanomyces strains and brewed with locally grown malted barley, wheat and oats. This blend has an average age of four months and provides berry forward, stone fruit and forest fruit aromatics. We conditioned this blended beer on 220g/l of locally grown Scottish blackberries (aka brambles). The resulting beer has an intense red/purple hue, and aromas of a forest fruit medley. We get sweet/sour tangy, hedgerow berries, guava, jammy raspberries and some light tannin from the berry skins

We based our recipe on some of the old porters from Barclay Perkins (1855) and Whitbread (1856) that were sent out to British servicemen in India, and inspired by the Durden Park Beer Circle pamphlet ‘Old British Beers and How To Make Them’. The ingredients and equipment they used then have of course changed, as have our tastes, and so we have made some modifications. We’ve tempered the roast character of the original with chocolate and crystal malts in place of some of the black: too much black malt can produce overly acrid, burnt and astringent flavours. Crystal malts bring a sweetness and fullness to the beer, and a bigger texture/mouthfeel. The main difference though is that our EIP is hopped in the way we would hop our pale ales and IPAs: lots of late addition hops for flavour, and we then dry hop when the beer is in tank. We mostly use American hops for their intensity and fruity characteristics, but we like to experiment with the different flavours that arise when they’re combined with darker malts. Bramling Cross is our favourite for a more traditional British character, whereas Columbus works very well for a brasher, new world flavour. The result is a dark brown beer that promises coffee and cocoa, but then the hops bring lightness, brightness and fruit, and the relatively high carbonation - unusual for a porter - make it surprisingly refreshing

Brasserie d'Orval // Orval // 6.2% // 330ml
The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster. In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s

The Kernel Brewery // Export India Porter // 5.8% // 550ml

Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture.

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

Schlenkerla // Helles Lagerbier // 5.1% // 500ml
“Schlenkerla Helles” is brewed with fine Bavarian aroma hops from the area around the city of Nürnberg. It's lagered in century old caves underneath the historic Schlenkerla brewery and maltings. Schlenkerla Helles is boiled in the same copper kettles and bottom fermented by the same yeast as the historic Schlenkerla Smokebeer. Its subtle smokiness without using smoke malt makes “Helles Schlenkerla Lager” a unique representative of the classic lager beer style “Bavarian Helles”

We wanted this to be a little lighter and fresher than the other porter recipes that we brew, to acknowledge its running nature. This beer leans into light cocoa, almost cola aromatics, with the herbal fruity hedgerow of Goldings and Bramling Cross.

BA Flanders Style Oud Bruin Aged in Oloroso Casks Inspired by Flanders Red/Brown beers of old, this is a blended sour red/brown ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 30% ‘mature’ stock beer which had been fermented on Rondo grape skins and aged in Oloroso Sherry casks. These casks had been refilled with single malt whisky from Auchroisk distillery, provided to us by our friends at Uncharted Whisky, an independent whisky bottler. This release presents rich dark fruit, juicy tart plums, sherry, nutty oak and a touch of cola cubes

Rose Petal & Chocolate Covered Strawberry Imperial Stout // 10.6%.This one really hooked me because it's both a striking visual image and a striking flavour combination. I've always thought the problem with chocolate covered Turkish Delight, which is very much the flavour goal here, is that the texture should be more of a liquid... And it should be 10.6% ABV."

The original Chubbles, brewed for the first time in 2017 with our friends, The Veil Brewing Co from Richmond Virginia. It defined modern-era TIPAs, breaking the mould, and remains entirely unchanged since. We are excited to be bringing back this powerhouse of a Triple IPA, using all English malt, a ton of flaked oats, and loads of Galaxy, Citra, and El Dorado. This beer is extremely juicy, full of hop flavour and has a deliciously full-on mouthfeel with a touch of tropical sweetness

For the first time, we’ve applied our SUPERCHARGED process to Forever Chubbles, pushing it through our centrifuge to control yeast management, employing our hop gun's double-helix extraction to extract hop flavour in record time, before using our decanter to squeeze the hops to near dry before packaging within 24 hours of dry hop. The result is precise hop expression: biotransformation exactly where we want it, zero hop burn, and fresh-from-FV intensity locked straight into package. This is Forever Chubbles, but brighter, cleaner, and better than ever
