A light and supremely drinkable ale-lager hybrid brewed with German Pilsner malt and Tettnang hops, fermented at elevated temperatures with a yeast strain originating from the Köln region to encourage fruity ester development. It’s delicately balanced with grainy-honey sweetness from the malt and very light hopping keeping bitterness low and contributing a freshly mown grass element… but it’s the muted notes of Starburst, sweet white wine and rhubarb from the yeast esters that make this beer, lending a moreish integrity to a wonderfully simple foundation

A well-rounded and balanced Old Ale, created in collaboration with Henry at Sunken Knave. Brewed using Chevalier heritage barley and aged in wood with a mixed culture of yeast and bacteria, the aroma consists of light caramel and honey with rich, funky red berry notes. Slightly tart with red wine characteristics, there are hints of balsamic and sour cherries; it’s remarkably light and easy drinking despite the complexity. In the glass it’s an appetising shade of copper red with an off white head; all in all an elegant beer that will continue to evolve in the bottle

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. We let this Frambozenlambik rest for almost 18 months before releasing it

This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze.
Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Mixed Culture Sour with British Chuckleberries
Blended from an even split of four-month-old golden and amber base beers, both primary fermented with super berry and citrus forward Brettanomyces strains. This blend was transferred to 200g/l of whole British grown chuckleberries and aged for an additional month. Chuckleberries are a hybrid of redcurrant, gooseberry and jostaberry (the latter also being a blackcurrant gooseberry cross). This dark reddish/purple fruit the size of a blackcurrant provides complex jammy flavours with a lingering tart sweetness

With a soft tan head and deep ruby hue, our take on a traditional Barleywine features a rich blend of British and German malts with a late addition of English and New Zealand hops.
A complex grain bill of Pale, Munich, Crystal, Amber, Carafa and Melanoidin malts creates a full-bodied biscuity foundation with nutty undertones. East Kent Goldings and Taiheke hops added towards the end of the boil infuse a subtle hop character that perfectly complements the malt base.

Primary fermented with a blend of Brettanomyces which produces huge tropical and stone fruit flavours, we refermented this base beer with an equivalent of 220g/l of starfruit (aka carambola). This south-east Asian fruit is notable for its star shaped cross section and has flavour descriptors which include pear, apple, grape and citrus. The sweet and sour balance of this fruit provides a fine complement to our most tropical house culture

This beer was conditioned on freshly harvested Italian bergamot oranges (Fantastico variety) which we manually zested, juiced and pulped. We sourced these bergamots directly from the growers at Azienda Agricola San Mauro in Calabria, who are a certified organic producer. A hybrid of bitter orange and lemon, this citrus fruit is prized for its intensely fragrant aroma, and most widely known for its use in Earl Grey tea

They created a 13% rich stout with honey and demerara in the base before conditioning the beer on our main ingredient, tonka beans. BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.

With Trim Levels we wanted to push the dry-hop grams per litre rate to something touching our IPA territory, whilst keeping things at Pale Ale strength. Featuring a four way split of South Pacific titan Nelson Sauvin, along with a trio of Stateside slammers in Simcoe, Idaho 7 and Mosaic all utilised in equal doses, this is a pale ale positively bursting with intense flavour and aroma profiles; wearing all the get up of an IPA but still smashable in pints. Expect to find a whole host of super-ripe tangerine, berry, bubblegum and pineapple backed up with sweaty stonefruit and freshly crushed gooseberries, balanced out with a resinous piney bitterness to keep things in check.
