Light and supremely drinkable, our Kölsch is brewed with German Pilsner malt and Tettnang hops and fermented at elevated temperatures with a yeast strain originating from the Köln region to encourage fruity ester development. It’s delicately balanced with grainy-honey sweetness from the malt and very light hopping keeping bitterness low and contributing a freshly mown grass element… but it’s the muted notes of Starburst, sweet white wine and rhubarb from the yeast esters that make this beer, lending a moreish integrity to a wonderfully simple foundation

Imperial stout with black treacle and toasted barrel staves.
Brewed in collaboration with Dead End Brew Machine, we put together a recipe for a deep rich imperial stout, layered with dark, roast and crystal malts, along with a 100kg of Tate and Lyle black treacle. The treacle adds a rich bittersweet flavour with notes of liquorice and caramel. We conditioned the beer on staves from a PX cask, which we chopped up and toasted in our smoker. The result is a powerful stout with notes of treacle, plums, burnt caramel, barrel oak and a whisper of smoke

Framboise style sour with Scottish Tayberries
Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

Inspired by Flanders Reds of old, Goatfire is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in freshly emptied Glen Moray whisky casks for one year. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was refermented on a combination of 220g/l locally grown Scottish strawberries and second use Morello cherries from Kent. We also added almonds to provide additional aromatics and deepen the natural almond flavour from cherry pits

We teamed up with our friends at Futtle (based in East Neuk, Fife) and Scratch Brewing (based in Illinois, US) for this foraged gose. We blended a golden sour base beer from our blending stock and aged this on whole locally grown red gooseberries (goosegogs). We used a carbonic maceration process to help break down the fruit and gain additional complexity from these berries.
To this blend we added foraged seaweed from the shores of East Neuk and spicebush berries from the woods around Scratch brewing. The resultant beer is sweet, salty, with heaps of gooseberry, spice and a whiff of sea-breeze

Our goal with this vintage was to get beer onto the fruit as soon as possible after harvesting to best showcase their intense fruit character, vibrant pinkish red hue and huge aroma.
Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. The resulting beer has a sour raspberry jam, hedgerow berries, pink fruit jelly and a touch of funkiness

Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

BA Flanders Red with Apricots and Plums
This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Framboise style sour beer with Scottish Tayberries.
Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

We teamed up with our friends at Futtle (based in East Neuk, Fife) and Scratch Brewing (based in Illinois, US) for this foraged gose. We blended a golden sour base beer from our blending stock and aged this on whole locally grown red gooseberries (goosegogs). We used a carbonic maceration process to help break down the fruit and gain additional complexity from these berries.
To this blend we added foraged seaweed from the shores of East Neuk and spicebush berries from the woods around Scratch brewing. The resultant beer is sweet, salty, with heaps of gooseberry, spice and a whiff of sea-breeze

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, brewed only about once per year, representing approximately 1% of total beer production. This beer begins with a density of 16.5º Plato is 7.5% ABV. “Rochefort 6” is the oldest Rochefort Trappist beer, and was brewed empirically until the end of the Second World War. Until 1958, this was the only Rochefort beer that was bottled in both 33 cc bottles and 75 cc bottles. It has a strong malt taste and is slightly bitter

This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

Brewed in collaboration with Dead End Brew Machine, we put together a recipe for a deep rich imperial stout, layered with dark, roast and crystal malts, along with a 100kg of Tate and Lyle black treacle. The treacle adds a rich bittersweet flavour with notes of liquorice and caramel. We conditioned the beer on staves from a PX cask, which we chopped up and toasted in our smoker. The result is a powerful stout with notes of treacle, plums, burnt caramel, barrel oak and a whisper of smoke

Inspired by Flanders Reds of old, Goatfire is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in freshly emptied Glen Moray whisky casks for one year. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was refermented on a combination of 220g/l locally grown Scottish strawberries and second use Morello cherries from Kent. We also added almonds to provide additional aromatics and deepen the natural almond flavour from cherry pits

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Like a rugged off-road version of its smooth, dry Irish cousin, the Foreign Extra Stout is gnarly and coat-your-mouth chewy as opposed to clean and crisp. The original Foreign Extra Stouts were fortified with increased hopping rates to aid preservation, and that extra bitterness balances the higher ABV as well as the treacle-sweetness. We teamed up with our friends at Futtle (based in East Neuk, Fife) and Scratch Brewing (based in Illinois, US) for this foraged gose. We blended a golden sour base beer from our blending stock and aged this on whole locally grown red gooseberries (goosegogs). We used a carbonic maceration process to help break down the fruit and gain additional complexity from these berries.
To this blend we added foraged seaweed from the shores of East Neuk and spicebush berries from the woods around Scratch brewing. The resultant beer is sweet, salty, with heaps of gooseberry, spice and a whiff of sea-breeze

Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
