We had to add an Imperial Stout to this set of magnificent liquids and who better to do it with than our friends at the legendary Cloudwater.
For you big stout lovers you will be familiar with their My Continuous Improvement series, so were we, so that was a good place to start.
We took key elements of the MCI beers and delicately weaved it into our own stout making approach. Post fermentation we hit the beer with a Cacaodemon level of cacao nibs courtesy of our buds @tablechocolate, a load of Madagascan vanilla and, new to both of us, Pandan!

Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Blended from four batches of golden sour beers all primary fermented with different Brettanomyces strains and brewed with locally grown malted barley, wheat and oats. We conditioned this blended beer on 220g/l of locally grown Scottish blackberries (aka brambles).

We are really excited to team up with the crew at Parish Brewing from Louisiana for this ode to the Citra hop. Taking inspiration from there incredible Citra hopped Ghost In The Machine DIPA, we decided to conjure up a DIPA that packs in as many expressions of the Citra hop as possible. From start to finish we added Citra in Incognito, Spectrum, BBC pellets, T90 pellets and Cryo befote finishing it off with Citra hop terpenes. This DIPA gives you all kinds of Citra aromas and flavours from the more tropical, juicy fruit to the pink grapefruit and lime citrus and peachy softness. Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze.
Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release

Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

For you big stout lovers you will be familiar with their My Continuous Improvement series, so were we, so that was a good place to start.
We took key elements of the MCI beers and delicately weaved it into our own stout making approach. Post fermentation we hit the beer with a Cacaodemon level of cacao nibs courtesy of our buds @tablechocolate, a load of Madagascan vanilla and, new to both of us, Pandan!

Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

A slow and low fermentation keeps things clean and crisp, and allows the array of delicate malt flavours to shine. Toasty rather than roasty notes are to the fore, alongside caramel, toffee, a gentle orchard fruitiness from restrained esters, and a hint of peat smoke. Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. We are really excited to team up with the crew at Parish Brewing from Louisiana for this ode to the Citra hop. Taking inspiration from there incredible Citra hopped Ghost In The Machine DIPA, we decided to conjure up a DIPA that packs in as many expressions of the Citra hop as possible. From start to finish we added Citra in Incognito, Spectrum, BBC pellets, T90 pellets and Cryo befote finishing it off with Citra hop terpenes. This DIPA gives you all kinds of Citra aromas and flavours from the more tropical, juicy fruit to the pink grapefruit and lime citrus and peachy softness. This is all before the terpenes join the melange. It was a first time for us to release a beer with terpenes and it won't be the last
