Brouwerij Lindemans // Apple // 3.5% // 250ml
Making apple beer goes back to ancestral tradition. The Celts drank it in abundance during their harvest festivals. All we have done is extend the pleasure to the present day by adding the juice of several varieties of apples to our delicious lambic. The tasting experience, which is quite exceptional, combines the sweetness of cider with the sourness characteristic of lambic
£2.95
Schneider Weisse // Original (TAP07) // 5.4% // 500ml
"Original" – the traditional wheat beer brewed unaltered in accordance with the original recipe of Georg I. Schneider since 1872 – and since then simply marquee. Of a deep amber colour, harmonically balanced and strong. That's what Bavaria tastes like
£4.50
Brouwerij Boon // Kriek Boon // 4.0% // 375ml
For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it.The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings
£5.50
Brouwerij Boon // Framboise Boon // 5.0% // 375ml
Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

Epochal Barrel Fermented Ales // The Sky is an Immortal Tent // 6.0% // 375ml
6% Scottish stock pale ale hopped with Idaho 7 and aged Motueka
This splendid pale was the result of us acquiring some 2014 (!) Motueka hops. Whilst most modern pale ales are built on the freshest of hops, aged hops have fascinating qualities too.
As they age, certain compounds are produced (oxidised fatty acids, for those taking notes!) which can be transformed by fermentation into the ripest of tropical fruit aromas. It's even been suggested by those in the know that a NEIPA might benefit from a little whirlpool dose of the well-aged stuff.
Brettanomyces kicks this up a notch, turning aged hop character into deep funks and ethereal fruit baskets. This is why lambic is so heavily hopped with well-aged cones.
Epochal was therefore the perfect home for these ancient Motuekas. We blended the aged hops with unaged Idaho 7 for complimentary freshness and fermented with our usual complex processes to draw forth the best from these ingredients.
After much maturation, the result is one of our finest pales to date. Latherous foam yields bruised pineapple, burst plum, candied lime peel, leather-bound books and dried roses. The pale is dry, ripping with fresh bitterness and crackling with refreshment. An immensely complex yet approachable stock beer
£7.40

Brasserie d'Orval // Orval // 6.2% // 330ml
The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

Cherry BA Flanders Red with Scottish Honeyberries
We picked two standout barrels of our aged Flanders Red for this beer. These had been aging in whisky casks which had previously held the beer-soaked whole cherries producing our beloved Unholy Mountain kriek.
We blended these barrels with a smaller portion of beer brewed and aged at the Hanging Bat in Edinburgh, which were aged in a quarter casks. The oxidative nature of aging in small barrels lent a rounded acidity when blended with the cherry barrels. We then refermented this blend on 200g/l of whole Scottish honeyberries for two months. 780 bottles only

In this years (2023) version of Honeybucket we conditioned the base beer with raw heather honey harvested from apiaries on the Falkland Estate, located about 27 miles from the brewery. Stock Ale

WHITE SMOKE
5.5% Smoked Scottish stock beer hopped with Challenger
Pale, hoppy, highly carbonated, zippy, dry and bitter smoked beers are quite a thing, and in fact have a long tradition in Polish Grodziskie. The flavours of smoke are also, of course, very prevalent in Scottish food and drink and so I'm delighted to present an Epochal take on the pale, hoppy, oak-smoked beverage.
This beer was brewed with a blend of Scottish malted barley and German oak smoked wheat malt and hopped with absolutely lashings of whole leaf Herefordshire Challenger, a bright and aromatic hop.
After open fermentation and cleansing, it was dry hopped in oak casks with more Challenger and allowed to ripen

Simple Things Fermentations // Wild Style - Stock Ale // 7.2% // 330ml
We matured our Burton IPA with a mixed culture of wild yeast in oak casks outside the brewery, exposing the wood to the elements for over a year in an attempt to simulate the sort of conditions that gave rise to the strong, vinous stock ales produced in a similar way two or three hundred years ago. The maturation has transformed the beer, rounding off the bitterness and producing a much drier finish, albeit with an appreciable amount of residual sweetness. The characteristic honey and apple notes are still prominent but are now part of a more complex picture that includes wine-like acidity, sour cherry, dried fruit, toffee, soft vanilla and of course the characteristic Brettanomyces funk

Vault City Brewing // Barleywine // 12.2% // 330ml
With a soft tan head and deep ruby hue, our take on a traditional Barleywine features a rich blend of British and German malts with a late addition of English and New Zealand hops.
A complex grain bill of Pale, Munich, Crystal, Amber, Carafa and Melanoidin malts creates a full-bodied biscuity foundation with nutty undertones. East Kent Goldings and Taiheke hops added towards the end of the boil infuse a subtle hop character that perfectly complements the malt base.
Each sip delivers notes of dark fruit with plum, raisin, and fig at the forefront, rounding out this exquisitely layered Barleywine

Our new beer release this week is an absolute passion project from our head brewer Mat and a beer he's wanted to make for a very long time.
Wah Donka is a wheat wine, taking its name from the Sherpa term for a red panda (hence the wonderful artwork provided by our designer Tina) and in tribute to the beautiful deep red colour of the beer.
The nose opens up with dark fruits and plums followed by the classic banana notes from the Hefeweizen yeast. The taste brings out further quintessential wheat characteristics of Banana and light spices all wrapped around the beautifully boozy, yet light backbone

Mixed Ferm
Wild Ales
Holy Goat Brewing // Funk Weapon // 6.2% // 375ml
Brewed with Scottish malted barley, wheat and rolled oats. Primary fermented with a mixed culture including a blend of Brettanomyces strains isolated from Belgian Lambic producers.
The second iteration of this beer is aged for four months, and packaged completely unfruited and unhopped to showcase the mixed fermentation character in full. We get pineapple, orange juice, stone fruits and zesty citrus notes, and a subtle funk that will develop over time
£6.75
Holy Goat Brewing // Lemon Crusher // 5.5% // 375ml
Blended from two batches of golden wort, each brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Gaining a deep citrus funk from four months aging in tank, we decided to pair this base beer with one of our favourite citrus fruits.
We manually zested, juiced and pulped over 100kg of freshly harvested Sicilian lemons (Feminello Siracusano variety). We sourced these directly from the growers Bio Agrumi Monasteri, who specialise in organic and sustainable cultivation practices

£14.80

£2.95
£6.60
Brouwerij Boon // Oude Geuze Boon // 7.0% // 375ml
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures
£6.00

Brouwerij De Halve Maan // Straffe Hendrik Quadrupel // 11.0% // 330ml
Straffe Hendrik Quadrupel, launched in 2010, is an intense beer, dark in colour and full in taste.
The aroma is elegant, spicy and slightly roasted.
The sophisticated blend of special kinds of malt give the beer a complex character, combining a delicate dryness with hints of coriander, dark fruits, anise and roasted chestnuts. The palate finishes in a syrupy taste.
The refermentation in the bottle creates a living beer that will evolve over the years
£6.00
Brouwerij De Halve Maan // Straffe Hendrix Tripel // 9.0% // 330ml
Straffe Hendrik is a Bitter Tripel Ale of 9% abv. The beer was originally from Bruges and brewed in Bruges by brewery De Halve Maan.
In 1981, Henri Maes and his daughter Véronique followed the demand of the mayor and created a strong blond beer for the inauguration of the statue of Sint-Arnoldus, the saint of all beer-brewers. However, the beer became so popular, that the demand for the beer continued. It was given the name of Straffe Hendrik (Strong Hendrick), since it was a rich and strong beer

Barneys Beer // Post Mortem #7: Blackcurrant // 5.5% // 375ml
Our Post Mortem Barrel-aging Project exists to allow us to dissect and examine unique styles of beer and experiment with unusual processes or ingredients in the brewing process.
Our turbid wort, made using barley and unmalted wheat was fermented using a mixed culture in stainless steel. Followed by spontaneous fermentation in ex-Pinot Noir wine casks for 20 months. Before a final, tertiary fermentation on blackcurrants.
Forest Fruits and hedgerow. Balanced acidity. Oak sweetness. Subtle funk

Holy Goat Brewing // Hail the Bat III // 8.4% // 375ml
780 bottles only
£9.60
Holy Goat Brewing // Doom Witch // 6.0% // 375ml
BA Flanders Red with Strawberries
Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

3 Fonteinen // Langste Kook // 7.4% // 750ml
For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen // Oude Kreik PX Geturfd // 7.3% // 375ml
PX Sherry Kriek
This Oude Kriek was macerated with sour cherries for almost eleven months. The lambikken used while macerating were both one- and two-year old. We also used one-, two- and three-year old lambikken from (slightly peated) sherry barrels to blend the sour cherry lambik into a Kriek. By doing so, the weighted average age of this Kriek is a tad less than two-and-a-half years upon release
£13.90
3 Fonteinen // Cuvee Armand Gaston // 7.2% // 750ml
This specific Cuvée Armand and Gaston has been blended with lambikken originating from six different barrels and not less than eleven different brews.
Two of these lambikken are 29-month old and have aged on two sherry barrels, that held Oloroso lambik for respectively at least 20 and 40 years. Of the total lambik volume, about 20% was brewed with our own cereals, sourced in Brabant, of which about 5% with heirloom wheat varieties
£27.00
3 Fonteinen // Oude Gueuze Cuvee Armand Gaston // 7.2% // 1500ml
3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

3 Fonteinen // Frambozen Lambik Oogst // 6.8% // 375ml
For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it
£27.00
3 Fonteinen // Doesjel 2020 // 6.5% // 750ml
This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze.
Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release

The Bruery Terreux // Framaheim // 5.8% // 750ml
Oak barrel-aged spontaneously fermented sour ale with raspberries
We’re proud to present Framaheim, a masterful ode to brewing and blending tradition. Our dedicated Bruers used traditional Belgian methods of turbid mashing and spontaneous fermentation to let the open air of Anaheim convey instinctive flavors. During its 24 months of aging, this framboise-style ale earns its name with a helping of fresh raspberries added to hand-selected, oak puncheons. This finished product balances notes of funky fruit and crisp, complex tartness our most keen enthusiasts will rejoice in.

£5.20
Holy Goat Brewing // Terrorizer // 6.0% // 375ml
BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.

Wander Beyond Brewing // Wah Donka // 10.5% // 440ml
Our new beer release this week is an absolute passion project from our head brewer Mat and a beer he's wanted to make for a very long time.

The nose opens up with dark fruits and plums followed by the classic banana notes from the Hefeweizen yeast. The taste brings out further quintessential wheat characteristics of Banana and light spices all wrapped around the beautifully boozy, yet light backbone
