Brasserie d'Orval // Orval // 6.2% // 330ml
The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster

Like a good Islay dram, this is a celebration of malted barley and peat smoke. Earthy smoke dominates the aroma; on the palate there’s fruity sweetness together with a firm whisp of peat; it’s deliciously smooth, full and well rounded but not overwhelming. Hints of liquorice and floral-citrus notes appear amongst dank campfire smoke as a beery bitterness creeps up, balanced with sweet malt and alcohol warmth. The flavours linger and develop in a long, tingling finish. Pairs brilliantly with slow cooked lamb or a hunk of Roquefort cheese

WHITE SMOKE
5.5% Smoked Scottish stock beer hopped with Challenger
Pale, hoppy, highly carbonated, zippy, dry and bitter smoked beers are quite a thing, and in fact have a long tradition in Polish Grodziskie. The flavours of smoke are also, of course, very prevalent in Scottish food and drink and so I'm delighted to present an Epochal take on the pale, hoppy, oak-smoked beverage.
This beer was brewed with a blend of Scottish malted barley and German oak smoked wheat malt and hopped with absolutely lashings of whole leaf Herefordshire Challenger, a bright and aromatic hop.
After open fermentation and cleansing, it was dry hopped in oak casks with more Challenger and allowed to ripen

Kriek style sour beer with Frederiksdal cherries
Inspired by the Belgian kriek style sour beer aged on whole sour cherries. This beer combines a blend of two of our favourite golden sour base beers, both brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains.
We aged this base beer for two months on over 450kg of whole ‘Stevnsbær’ sour cherries, sourced from the orchards on the Frederiksdal estate, used to produce award-winning Danish cherry wine. One of the rarest, most intensely flavourful cherries attainable, and one of our favourites to work with

The average age of the Duchesse de Bourgogne before being bottled is 12 months

3 Fonteinen // Langste Kook // 7.4% // 750ml
For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen // Oude Kreik PX Geturfd // 7.3% // 375ml
PX Sherry Kriek
This Oude Kriek was macerated with sour cherries for almost eleven months. The lambikken used while macerating were both one- and two-year old. We also used one-, two- and three-year old lambikken from (slightly peated) sherry barrels to blend the sour cherry lambik into a Kriek. By doing so, the weighted average age of this Kriek is a tad less than two-and-a-half years upon release

3 Fonteinen // Cuvee Armand Gaston // 7.2% // 750ml
This specific Cuvée Armand and Gaston has been blended with lambikken originating from six different barrels and not less than eleven different brews.
Two of these lambikken are 29-month old and have aged on two sherry barrels, that held Oloroso lambik for respectively at least 20 and 40 years. Of the total lambik volume, about 20% was brewed with our own cereals, sourced in Brabant, of which about 5% with heirloom wheat varieties

3 Fonteinen // Oude Gueuze Cuvee Armand Gaston // 7.2% // 1500ml
3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

3 Fonteinen // Frambozen Lambik Oogst // 6.8% // 375ml
For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it

3 Fonteinen // Doesjel 2020 // 6.5% // 750ml
This Doesjel was bottled on the 1st of December of 2020 and was intended to be an Oude Geuze.
Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release

This finished product balances notes of funky fruit and crisp, complex tartness our most keen enthusiasts will rejoice in.

Dark mahogany with a creamy off-white head and an immediate full-on bonfire-bacon aroma that quickly starts to reveal layers of vanilla, raspberry, coffee, toffee, maple syrup and chocolate. Simple Things Fermentations // Peated Pale // 5.6% // 440ml

Holy Goat Brewing // Terrorizer // 6.0% // 375ml
BA Blended Golden Sour with Scottish Blackcurrants. Brewed in collaboration with our friends at Fierce Beer, we produced this mixed culture blackcurrant sour from a blend of our beers. We used 50% golden sour beer aged in tank for six months brewed at Holy Goat, along with 50% rye sour aged in barrels for over two years brewed at Fierce Beer. We then refermented this blended base beer with 240g/l of freshly harvested blackcurrants grown within 40 miles of the brewery, followed by dry-hopping with Bramling Cross. This blend represents the final barrel stock from Fierce Beers – Fierce by Nature barrel project, which we took over one year ago and which helped us kickstart our own barrel aging programme.
