A much deeper and more complex stout than the ABV would suggest arrives with waves of coffee and dark chocolate. A helping of oats and a high finishing gravity provide a smooth mouthfeel and satisfying body

Packed with all of the Citra and Mosaic that you can imagine, this is just oozing tropical, stone fruit and citrus. We hit it with three different hop formats at three stages during fermentation to really weave the deep fruit flavours in. Two separate Citra and Mosaic Spectrum additions during fermentation lay an already massive mango, pineapple and peach foundation before we added both T90 and Cryo pellets of those two modern classic hops post fermentation. The latter additions really saturate the hop profile into an overripe tropical, stone fruit bonanza. The malt base on this version of Double Soup reflects our current DIPA's, loaded with flaked wheat and oats to overdrive that creamy, silky body

Sweet melomel - 8.3% ABV. A tropical fruit bomb of a melomel. Aromatics from the fresh and deliberately over-ripened pineapple, are both complemented and accentuated by the ester profile and the acidity of the passionfruit. Moderate sweetness, but balanced nicely with a slight tartness
£18.00

Up Front Meadery // Sweet Quince // 8.3% // 500ml
Sweet Melomel - 8.3% ABV. Showcasing the humble and oft overlooked quince - a medley of flavours, somewhere between apple, pear and light lemon, sometimes verging on subtle pineapple. Often relegated to playing second fiddle, here we celebrate quince by placing it front and centre, allowing it to work in conjunction with the slightly floral honey flavours of a generous backsweetening, to make for a simple yet delicious sweet melomel, the perfect accompaniment to any dessert

Holy Goat Brewing // BA Thundercurrant // 7.7% // 750ml
Barrel Aged Golden Sour with Scottish Blackcurrants
Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior.
The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

Holy Goat Brewing // Crimson Curse // 7.6% // 375ml
BA Flanders Red with Apricots and Plums
This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Framboise style sour beer with Scottish Tayberries.
Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred.
This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

Barley Wine

Holy Goat Brewing // 180 Shilling Ale // 12.0% // 440ml
Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

Each sip delivers notes of dark fruit with plum, raisin, and fig at the forefront, rounding out this exquisitely layered Barleywine

3 Fonteinen // Langste Kook // 7.4% // 750ml
For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

3 Fonteinen // Cuvee Armand Gaston // 7.2% // 750ml
This specific Cuvée Armand and Gaston has been blended with lambikken originating from six different barrels and not less than eleven different brews.
Two of these lambikken are 29-month old and have aged on two sherry barrels, that held Oloroso lambik for respectively at least 20 and 40 years. Of the total lambik volume, about 20% was brewed with our own cereals, sourced in Brabant, of which about 5% with heirloom wheat varieties

3 Fonteinen // Oude Gueuze Cuvee Armand Gaston // 7.2% // 1500ml
3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambik proportions, etc. This cuvée, like all of our lambik, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. This geuze has fermented in the bottle and will continue to develop its tastes and aromas over its long life when properly cellared. Traditional Lambik is living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy, and experience this unfiltered, unpasteurised, and unadulterated beer with friends new and old

Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it

The Bruery Terreux // Framaheim // 5.8% // 750ml
Oak barrel-aged spontaneously fermented sour ale with raspberries
We’re proud to present Framaheim, a masterful ode to brewing and blending tradition. Our dedicated Bruers used traditional Belgian methods of turbid mashing and spontaneous fermentation to let the open air of Anaheim convey instinctive flavors. During its 24 months of aging, this framboise-style ale earns its name with a helping of fresh raspberries added to hand-selected, oak puncheons. This finished product balances notes of funky fruit and crisp, complex tartness our most keen enthusiasts will rejoice in.

Scotch Ale

Simple Things Fermentations // Scottish Light // 3.0% // 440ml
Light in alcohol content but dark in colour, our Scottish Light (or 60/-) delivers a rich and rewarding experience. A slow and low fermentation keeps things clean and crisp, and allows the array of delicate malt flavours to shine. Toasty rather than roasty notes are to the fore, alongside caramel, toffee, a gentle orchard fruitiness from restrained esters, and a hint of peat smoke. A balancing bitterness prevents the finish from being cloying but there’s enough residual sweetness to leave a satisfying mouthfeel that belies the low ABV. This under-represented style works equally well in summer or winter and ages well, making it a great choice for the fridge and the cellar
£3.90

Packed with all of the Citra and Mosaic that you can imagine, this is just oozing tropical, stone fruit and citrus. The latter additions really saturate the hop profile into an overripe tropical, stone fruit bonanza. The malt base on this version of Double Soup reflects our current DIPA's, loaded with flaked wheat and oats to overdrive that creamy, silky body

Holy Goat Brewing // Bramble Smasher // 5.8% // 375ml
Mixed Fermentation Golden Sour with Scottish Blackberries
Blended from four batches of golden sour beers all primary fermented with different Brettanomyces strains and brewed with locally grown malted barley, wheat and oats. This blend has an average age of four months and provides bright tropical, stone fruit and red berry aromatics. We conditioned this blended beer on 220g/l of locally grown Scottish blackberries (aka brambles).
The resulting beer has an intense red/purple hue, and aromas of a tropical berry fruit medley. We get sweet/sour tangy, hedgerow berries, guava, jammy raspberries and some light tannin from the berry skins

Holy Goat Brewing // Spectral Lore // 5.9% // 375ml
