It could be said that we've been pretty taken by Strata since it arrived at Polly's HQ. As everyone's favourite new hype hop, we approached it with a little bit of hesitancy at first, but from the moment we opened the first bag here at the brewery we understood why every brewery in the country is clamouring for this incredible varietal. Having utilised it as an accompanying hop alongside other varietals recently, we decided "Why the hell not?" and commissioned a full-on, single hop beer to see what this new darling of the brewing world could do on its own. Knocking it out of the park in one of the most underrated arms of the brewery; our DDH Pale Ales, this beer absolutely bursts with intense passionfruit notes, backed up with that distinctive dank weed aroma for good measure

Packed with all of the Citra and Mosaic that you can imagine, this is just oozing tropical, stone fruit and citrus. We hit it with three different hop formats at three stages during fermentation to really weave the deep fruit flavours in. Two separate Citra and Mosaic Spectrum additions during fermentation lay an already massive mango, pineapple and peach foundation before we added both T90 and Cryo pellets of those two modern classic hops post fermentation. The latter additions really saturate the hop profile into an overripe tropical, stone fruit bonanza. The malt base on this version of Double Soup reflects our current DIPA's, loaded with flaked wheat and oats to overdrive that creamy, silky body

Our newest West Coast IPA to come off the line is Santako. We've based this on one of our recent WCIPA's, Plasticity, but have replaced the Cascade portion of the dry hop with Amarillo to push the orangey citrus character further. Combined with Citra, Simcoe and Columbus the aroma immediately presents plenty of dank pine resin, marijuana, orange and grapefruit zest and some slight peachiness. The initial taste follows with more citrus and a little kiss of sweetness before finishing with a dry and firm bitterness that does't overstep the mark. The body is on the leaner, drier side yet with the little addition of a very light caramel malt, a slight sweet touch blends with the bitter finish to give some of that sticky, oily, resinous character that we love in West Coast IPA. This is a west coast IPA designed with drinkibility in mind and what's more it's even celiac-friendly

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!

For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings

BA Golden Sour with Blueberry, Honeyberry and Violet Flowers. This beer is blended from a mix of golden sour fermented with our ‘Seabeast’ Brettanomyces culture, along with another golden sour aged in oak wine barrels for two years (80/20). We refermented this blend with 200g/l of blueberries and honeyberries which were harvested within 60 miles of the brewery, in addition to a hot violet flower infusion. The resultant beer is a deep reddish-purple colour with sweet fresh aroma of violet flowers and forest berries with a slowly developing Brettanomyces funk

This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop. The colour is beautifully gold and pours with lashings of lashings of tight, white foam. On the nose, tilled earth, Keralan pepper, heather honey and fresh lilies. There are leatherous vapours of fermentation, pink grapefruit and ripe pineapple drawn from the Centennial. On the palate it is dry and full, with a final and lingering rush of Goldings in the finish

Brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation

We hit it with three different hop formats at three stages during fermentation to really weave the deep fruit flavours in. This beer is blended from a mix of golden sour fermented with our ‘Seabeast’ Brettanomyces culture, along with another golden sour aged in oak wine barrels for two years (80/20). We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Wanting to pay homage to the beers from this incredible part of the continent, we’ve put a modern twist on a classic with We Are Affected – a Grisette generously hopped with Nelson Sauvin. Featuring the lightest malt bill we’ve ever done, we specifically wanted to make a beer that is crisp, clean, and accentuates the incredible flavour notes imparted by the hops and the yeast. Utilizing a Belgian saison yeast, we find the floral and fruity phenols play off the white wine grape flavours from Nelson.

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries

Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!

Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months.The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. Brewed with Maris Otter malt, Brook House Goldings and Yakima Chief Centennial. The goal was to accent the refined bitterness and depth of Goldings with delicate, fruity top notes from Centennial. This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop. The colour is beautifully gold and pours with lashings of lashings of tight, white foam. On the nose, tilled earth, Keralan pepper, heather honey and fresh lilies. There are leatherous vapours of fermentation, pink grapefruit and ripe pineapple drawn from the Centennial. On the palate it is dry and full, with a final and lingering rush of Goldings in the finish

Epochal Barrel Fermented Ales // Of Myces And Men // 6.2% // 375ml
Brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. We've based this on one of our recent WCIPA's, Plasticity, but have replaced the Cascade portion of the dry hop with Amarillo to push the orangey citrus character further. Combined with Citra, Simcoe and Columbus the aroma immediately presents plenty of dank pine resin, marijuana, orange and grapefruit zest and some slight peachiness. The initial taste follows with more citrus and a little kiss of sweetness before finishing with a dry and firm bitterness that does't overstep the mark. The body is on the leaner, drier side yet with the little addition of a very light caramel malt, a slight sweet touch blends with the bitter finish to give some of that sticky, oily, resinous character that we love in West Coast IPA.
