This brand new version of CCC takes inspiration from the wholesome, heartwarming Mexican Mole. Chilli and chocolate is a classic combination, and we’ve opted for using Ancho, Pasilla and Guajilla varieties for a spectrum of beautiful flavour. Further layers of mole come in the form of spicy, cinnamon notes of Amburana, delicate nutmeg and luxurious vanilla. We’re also using an experimental HBC472 hop, known for its barrel aged and vanilla character - so although we don't have a barrel aged beer in this year's selection, this creation definitely shares some of the sensibilities

Our white stout pours with the golden shine of maple syrup, perfect for the drizzled pancake inspiration. Having learned lots from two previous creations, this is a supergroup of a beer. Taking out some of the darker malts gives more room for the expression of incredible bourbon maple chips. These are oak chips from barrels previously used to age whiskey, then a second use of maple syrup. Yes, it's a real thing and no, we can't believe our luck either. Espresso, sourced with the help of our local heroes Anonymous, gives us a touch of bitterness to balance out all the inherent sweetness in the beer, at the same time adding back in some of the roastiness that the more heavily roasted malts would normally provide. It's the perfect counterpoint to keep this white stout drinkable and moreish

Inspired by Flanders Reds of old, Crimson Void is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in oak barrels. Brewed with Maris Otter malt, Brook House Goldings and Yakima Chief Centennial. The goal was to accent the refined bitterness and depth of Goldings with delicate, fruity top notes from Centennial. This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop. The colour is beautifully gold and pours with lashings of lashings of tight, white foam. On the nose, tilled earth, Keralan pepper, heather honey and fresh lilies. There are leatherous vapours of fermentation, pink grapefruit and ripe pineapple drawn from the Centennial. On the palate it is dry and full, with a final and lingering rush of Goldings in the finish

It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation

We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Wanting to pay homage to the beers from this incredible part of the continent, we’ve put a modern twist on a classic with We Are Affected – a Grisette generously hopped with Nelson Sauvin. Featuring the lightest malt bill we’ve ever done, we specifically wanted to make a beer that is crisp, clean, and accentuates the incredible flavour notes imparted by the hops and the yeast. Utilizing a Belgian saison yeast, we find the floral and fruity phenols play off the white wine grape flavours from Nelson.

Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months.The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. Brewed with Maris Otter malt, Brook House Goldings and Yakima Chief Centennial. The goal was to accent the refined bitterness and depth of Goldings with delicate, fruity top notes from Centennial. This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop. The colour is beautifully gold and pours with lashings of lashings of tight, white foam. On the nose, tilled earth, Keralan pepper, heather honey and fresh lilies. There are leatherous vapours of fermentation, pink grapefruit and ripe pineapple drawn from the Centennial. On the palate it is dry and full, with a final and lingering rush of Goldings in the finish

Brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation

A 3.8% Saaz table beer. In the 1800’s, funky, hoppy table beers were a very Scottish thing, and Saaz was a favourite variety of the producers who made them. Siphonaptera draws inspiration from this tradition. It is pale in colour and fluffy in foam. On the nose, there are notes of overripe lemon tea, honeysuckle, beeswax and violets. On the palate, it is airily light with a clean, snappy bitterness. Just the ticket for unreasonably hot weather.

We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Fermented with a mixed culture and aged for around three months, before being transferred onto 250l of blood orange and clementine juice, with an additional 50kg of whole fruit, which were zested, pulped, and juiced by hand. These citrus fruits were freshly picked from the winter harvest of Italian organic producers (Cooperativa I Fruitti del Sole & Oroverde)

We’re huge fans of the classics here at Polly’s, and a discussion amongst the staff about desert island beers led us to talk about the incredible beers from De Ranke brewery, just on the Belgium/France border. Wanting to pay homage to the beers from this incredible part of the continent, we’ve put a modern twist on a classic with We Are Affected – a Grisette generously hopped with Nelson Sauvin. Featuring the lightest malt bill we’ve ever done, we specifically wanted to make a beer that is crisp, clean, and accentuates the incredible flavour notes imparted by the hops and the yeast. Utilizing a Belgian saison yeast, we find the floral and fruity phenols play off the white wine grape flavours from Nelson.

Raw beer describes the primarily historic practice of brewing beer without boiling the wort. this can create interesting nuance, providing a fresher, deeper malt character. The beer was subsequently blended (80/20) with a 2-year-old golden sour ale, aged in wine barrels. this blend was then refermented with 200g/l of Spanish apricots and Tanzanian vanilla. the resultant beer has intense stone fruit, along with a delicate but growing funk

Gnosis is inspired by Saison brewing traditions from Belgium. Brewed using locally harvested, barley, wheat and oats, and hopped in the kettle with aged Scottish First Gold. We fermented this for 4 months, using a blend of Belgian Saison yeast strains, Brettanomyces and a mix of microbes cultured from spontaneous beers. Gnosis was dry-hopped with whole leaf First Gold hops, along with bitter orange peel and the zest, flesh and juice of green bergamot.
