Brewed in collaboration with Epochal Barrel Fermented Ales. This is a recreation of a beer found in bottles retrieved from a shipwrecked vessel Wallachia, which sank after a collision in the Clyde Estuary in 1895. The beer itself was a strong export stout from the McEwan’s brewery in Glasgow, destined for the West Indies. Our version utilises ingredients typical for the period, including heritage Chevallier base malt, amber, brown and black roasted malts and No.2 Invert sugar. This version has been barrel aged for one year in North British whisky casks, along with a mixed culture (Brettanomyces and Debaromyces) harvested from the original bottles salvaged from the shipwreck. Hail the Goat!

Limonata sour with Spanish Lemons Brewed in collaboration with our pals at Newbarns Brewery, we took inspiration from Limonata soft drinks to produce our own mixed fermentation version. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. We refermented this base beer with over 100kg of lemons, with a mixture of 60kg comminute and 40kg organically grown whole lemons from Comares, Spain. The whole lemons were zested and juiced by hand. Drink young or age, this will get weirder. Hail the Goat!

Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Hail the Goat!

Barrel aged kriek with Stevnsbær sour cherries 8.0% This mixed culture kriek was fermented on whole Stevnsbær sour cherries (200g/l) sourced from the Frederiksdal estate orchards, who use them to make award winning Danish cherry wine. We then aged this beer in a first fill red wine barrel for over one year with additional cherries added directly in to the barrel. Finally, we racked the beer from barrel into tank with a further 250g/l Frederiksdal cherry juice to provide additional fruit intensity, freshness and to naturally carbonate the beer. Framboise style sour with Scottish Tayberries Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 250g/l Scottish Tayberries harvested within 12 miles of the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster. In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s

Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Hail the Goat!

We refermented this base beer with over 100kg of lemons, with a mixture of 60kg comminute and 40kg organically grown whole lemons from Comares, Spain. The whole lemons were zested and juiced by hand. Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Brewed in collaboration with Epochal Barrel Fermented Ales. This is a recreation of a beer found in bottles retrieved from a shipwrecked vessel Wallachia, which sank after a collision in the Clyde Estuary in 1895. The beer itself was a strong export stout from the McEwan’s brewery in Glasgow, destined for the West Indies. Our version utilises ingredients typical for the period, including heritage Chevallier base malt, amber, brown and black roasted malts and No.2 Invert sugar. This version has been barrel aged for one year in North British whisky casks, along with a mixed culture (Brettanomyces and Debaromyces) harvested from the original bottles salvaged from the shipwreck. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

Brewed in collaboration with Epochal Barrel Fermented Ales. This is a recreation of a beer found in bottles retrieved from a shipwrecked vessel Wallachia, which sank after a collision in the Clyde Estuary in 1895. The beer itself was a strong export stout from the McEwan’s brewery in Glasgow, destined for the West Indies. Our version utilises ingredients typical for the period, including heritage Chevallier base malt, amber, brown and black roasted malts and No.2 Invert sugar. This version has been barrel aged for one year in North British whisky casks, along with a mixed culture (Brettanomyces and Debaromyces) harvested from the original bottles salvaged from the shipwreck. Flanders Red with rooibos tea and damson plum Brewed in collaboration with our pals at Otherworld Brewery, this Flanders Red inspired sour beer is a blended sour red ale combining 80% provision strength ‘young’ stock beer brewed with a rooibos tea and aged in a stainless steel for six months. A portion of around 20% ‘mature’ stock beer was aged in neutral whisky casks for an average of one year. This blend was then refermented and conditioned on 100g/l damson plums and rhubarb juice. The resulting beer has a complex and fragrant fruit character, with notes of stewed berries, plums, pineapple and a mix of balsamic and citrus acidity. Drink young or age, this will get weirder. Hail the Goat!

Limonata sour with Spanish Lemons Brewed in collaboration with our pals at Newbarns Brewery, we took inspiration from Limonata soft drinks to produce our own mixed fermentation version. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. We refermented this base beer with over 100kg of lemons, with a mixture of 60kg comminute and 40kg organically grown whole lemons from Comares, Spain. The whole lemons were zested and juiced by hand. Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation.
