This collaborative brew, between me and Sam Luntley, began on St. Patrick's Day in 2024 when Sam used a plum porter I brewed in a delicious celebratory Irish soda bread.  Sam and his partner's (Anna Luntley) baking has continued to inspire my brews ever since.  We share similar values of creativity, kindness, dedication to quality of product & attention to detail.  It has been a great pleasure to work together and learn from likeminded folk. It's been insightful and educational, not least in appreciating the cross-over of the worlds of bread and beer making.  Early this year we began work on a recipe using Sam's sourdough starter and Scotland The Bread's Balcaskie wheat, the predominant grain used by Sam in his sourdough bread.  We liked the idea of a raw (no boil) Berliner Weisse soured exclusively by the starter Sam has nurtured and baked with for over a decade.  The wild sourdough ferment is full of fruity esters: a fascinating and unique culture which soured the wort brilliantly.    The beer was then co-fermented with several farmhouse yeast strains and subtly dry-hopped with Olicana, a British hop with peachy aromas and tropical fruit characteristics. The beer was then conditioned long and slow for a full expression, perfect for summer sipping.    The result is a tart, but not too sour, modern Scottish Berliner Weisse with stone fruit aromas that lean into a citrus palate of lilting fruitiness, and leads to a dry refreshing finish

BA Flanders Red with Strawberries Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. This collaborative brew, between me and Sam Luntley, began on St. Patrick's Day in 2024 when Sam used a plum porter I brewed in a delicious celebratory Irish soda bread.  Sam and his partner's (Anna Luntley) baking has continued to inspire my brews ever since.  We share similar values of creativity, kindness, dedication to quality of product & attention to detail.  It has been a great pleasure to work together and learn from likeminded folk. It's been insightful and educational, not least in appreciating the cross-over of the worlds of bread and beer making.  Early this year we began work on a recipe using Sam's sourdough starter and Scotland The Bread's Balcaskie wheat, the predominant grain used by Sam in his sourdough bread.  We liked the idea of a raw (no boil) Berliner Weisse soured exclusively by the starter Sam has nurtured and baked with for over a decade.  The wild sourdough ferment is full of fruity esters: a fascinating and unique culture which soured the wort brilliantly.    The beer was then co-fermented with several farmhouse yeast strains and subtly dry-hopped with Olicana, a British hop with peachy aromas and tropical fruit characteristics. The beer was then conditioned long and slow for a full expression, perfect for summer sipping.    The result is a tart, but not too sour, modern Scottish Berliner Weisse with stone fruit aromas that lean into a citrus palate of lilting fruitiness, and leads to a dry refreshing finish

BA Flanders Red with Strawberries Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery

Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Raspberries harvested with 20 miles of the brewery. Our goal with this vintage was to get beer onto the fruit as soon as possible after harvesting to best showcase their intense fruit character, vibrant pinkish red hue and huge aroma. Brewed with golden promise pale malt, wheat, locally grown oats. Fermented for three months with Brettanomyces and soured with our house culture. Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

This collaborative brew, between me and Sam Luntley, began on St. Patrick's Day in 2024 when Sam used a plum porter I brewed in a delicious celebratory Irish soda bread.  Sam and his partner's (Anna Luntley) baking has continued to inspire my brews ever since.  We share similar values of creativity, kindness, dedication to quality of product & attention to detail.  It has been a great pleasure to work together and learn from likeminded folk. It's been insightful and educational, not least in appreciating the cross-over of the worlds of bread and beer making.  Early this year we began work on a recipe using Sam's sourdough starter and Scotland The Bread's Balcaskie wheat, the predominant grain used by Sam in his sourdough bread.  We liked the idea of a raw (no boil) Berliner Weisse soured exclusively by the starter Sam has nurtured and baked with for over a decade.  The wild sourdough ferment is full of fruity esters: a fascinating and unique culture which soured the wort brilliantly.    The beer was then co-fermented with several farmhouse yeast strains and subtly dry-hopped with Olicana, a British hop with peachy aromas and tropical fruit characteristics. The beer was then conditioned long and slow for a full expression, perfect for summer sipping.    The result is a tart, but not too sour, modern Scottish Berliner Weisse with stone fruit aromas that lean into a citrus palate of lilting fruitiness, and leads to a dry refreshing finish

Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. For this Langste Kook / Longest Boil - a special version of the Cuvée Armand & Gaston - we brewed a typical lambik wort, but with an extended boiling time. We usually boil for five hours - the highest in the lambik world and about tenfold of modern beer brewing. Now, we boiled a whopping eighteen hours. 18. Hours. After a full year of barrel fermentation and maturation, we blended with a young portion of lambik to assure continued bottle fermentation. With a weighted average age of the blend of almost twelve months upon bottling, this is a rather young geuze, but all lambikken were brewed with Pajottenland grains from our own Cereal Collective

Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

This collaborative brew, between me and Sam Luntley, began on St. Patrick's Day in 2024 when Sam used a plum porter I brewed in a delicious celebratory Irish soda bread.  Sam and his partner's (Anna Luntley) baking has continued to inspire my brews ever since.  We share similar values of creativity, kindness, dedication to quality of product & attention to detail.  It has been a great pleasure to work together and learn from likeminded folk. It's been insightful and educational, not least in appreciating the cross-over of the worlds of bread and beer making.  Early this year we began work on a recipe using Sam's sourdough starter and Scotland The Bread's Balcaskie wheat, the predominant grain used by Sam in his sourdough bread.  We liked the idea of a raw (no boil) Berliner Weisse soured exclusively by the starter Sam has nurtured and baked with for over a decade.  The wild sourdough ferment is full of fruity esters: a fascinating and unique culture which soured the wort brilliantly.    The beer was then co-fermented with several farmhouse yeast strains and subtly dry-hopped with Olicana, a British hop with peachy aromas and tropical fruit characteristics. The beer was then conditioned long and slow for a full expression, perfect for summer sipping.    The result is a tart, but not too sour, modern Scottish Berliner Weisse with stone fruit aromas that lean into a citrus palate of lilting fruitiness, and leads to a dry refreshing finish

Barrel Aged Golden Sour with Scottish Blackcurrants Inspired by the Belgian cassis, our version was primary fermented with a Brettanomyces blend providing juicy citrus and stone fruit flavours. We refermented this base beer with 300g/l of local blackcurrants and then aged it oak barrels for two years. Upon rediscovery of these old barrels, we transferred this beer onto an additional 200g/l whole blackcurrants which underwent carbonic maceration one week prior. The resulting beer is therefore ‘double fruited’ and displays an intense depth of fruit and wild yeast fermentation character. All ingredients were harvested within 33 miles of the brewery. Limited to 336 bottles

BA Flanders Red with Apricots and Plums This Flanders Red style beer was blended from 80% provision strength ‘young’ stock beer aged 4 months, along with 20% of our most ancient ‘mature’ stock beer which has been aged in whisky casks for nearly three years. The combination of very old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was conditioned on whole British grown apricots and plums (approx. 200g/l total) for six weeks. Whilst the apricots were destoned by hand, the plums were left whole to breakdown slowly during refermentation. The result is a complex sweet/sour/savoury blend with notes of apricot, oaky funk, tart plums, dates and toffee apples

Light in alcohol content but dark in colour, our Scottish Light (or 60/-) delivers a rich and rewarding experience. A slow and low fermentation keeps things clean and crisp, and allows the array of delicate malt flavours to shine. Toasty rather than roasty notes are to the fore, alongside caramel, toffee, a gentle orchard fruitiness from restrained esters, and a hint of peat smoke. A balancing bitterness prevents the finish from being cloying but there’s enough residual sweetness to leave a satisfying mouthfeel that belies the low ABV. This under-represented style works equally well in summer or winter and ages well, making it a great choice for the fridge and the cellar

Scottish Barleywine. Brewed in collaboration with our friends at Newbarns, we made this take on a traditional Scottish ale using a double/reiterated mash. This 17th century brewing technique utilises the runoff wort from one mash, as the liquor for a second. This effectively concentrates the wort, allowing the production of a very strong beer without the use of additional sugars (though we did also add sugars here). We used a historic inspired recipe utilising Chevallier malt along with heritage crystal and No. 2 invert sugar, ingredients typically used in beers of this calibre since the late 1800’s.

Framboise style sour beer with Scottish Tayberries. Inspired by the Belgian Framboise style, we refermented our base golden sour beer on 220g/l Scottish Tayberries harvested 12 from miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee, where these berries were first bred. This beer combines a blend of two golden sour beers, brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Whilst a framboise style is traditionally brewed with raspberries, we decided to use our local tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma

Another exciting brewery debut for Mash '24 is the mighty Mortalis. These guys don't do things by halves so when we starting chatting about a collab we knew we had to go mad. This is the most heavily fruited sour beer that we have ever brewed and it's a tropical fruit blast. Pineapple, passion fruit and mango by the trailer load and conditioned on organic vanilla from Madagascar and a touch of salt. This is a luxurious slice of summer that really feels like a sweet tropical fruit smoothy with a roundness from the vanilla and a refreshing salty kick

Brewed in collaboration with the Women in Beer Group. Inspired by Flanders Reds of old, blended from sour red ale combining 70% provision strength ‘young’ stock beer aged 4 months, with around 30% ‘mature’ stock beer aged in well used red wine casks for an average of one year. Pina colada inspired golden sour. This collaboration with our friends at ABYSS Brewing takes inspiration from their Tropical Thunder IPA, a super juicy heavily hopped pina colada inspired beer. Our version uses a tweaked malt bill and recipe designed for extra juiciness. We dry-hopped this beer with Sabro, Citra, Azacca and Sorachi Ace, with a goal to produce intense mango, passionfruit, pine and coconut aromatics in addition to a touch of yuzu to garnish with a perfumed citrus backbone in the mix

With a soft tan head and deep ruby hue, our take on a traditional Barleywine features a rich blend of British and German malts with a late addition of English and New Zealand hops. A complex grain bill of Pale, Munich, Crystal, Amber, Carafa and Melanoidin malts creates a full-bodied biscuity foundation with nutty undertones. East Kent Goldings and Taiheke hops added towards the end of the boil infuse a subtle hop character that perfectly complements the malt base.
